This video series is intended to instruct you in the various cooking techniques used in both home and professional kitchens. If you are just starting to learn how to cook, it is highly recommended that you listen to The Stella Culinary School Podcast episodes 6, 7 & 8 before watching these videos.
Culinary Knife Skills
Culinary knife skill techniques are one of the first things you need to master to work in a professional kitchen or just take your cooking to the next level. A large part of a commercial kitchen's operation revolves around their daily prep; there is no quality prep without efficient and accurate knife skills. This HD video series will start with the basics, like how to set up your cutting board, hold your knife and basic skills like dicing and julienne. The series then moves into more advanced prep techniques, along with tutorials on how to sharpen your knife, butchery, and basic meat fabrication. "Knife Skills - HD" was formulated as an extension of SCS Episode 1| Basic Knife Skills, an audio lecture coving this subject. It is highly recommended that you listen to this lecture before watching these videos. As this is on ongoing series, if you have any request for new knife skill technique videos, please leave them in the comment section below.
Food Science 101
Having a deep understanding of food science is one of the best ways to take your cooking to the next level. Traditional cooking is filled with so much culinary dogma that it is sometimes hard to tell the difference between fact and fiction. This video series was created to take a deeper look behind the science that makes great food possible.
House Cured Charcuterie
Welcome to the wonderful world of Charcuterie, the culinary art that takes extremity cuts and turns them into gastronomic gold. By understanding the effect salt, smoke and time have on meat, chef's are able to utilize every part of the animal, showing greater respect for the life taken so that we might eat meat. Originally developed to store meats before modern refrigeration, charcuterie is still alive and well for one simple reason: it is absolutely delicious! Kitchen Prep is the life blood of any restaurant or meal. Also known as "mise en place," meaning everything in place, kitchen prep is what allows you to cook and serve a complex meal, "a la minute." The job title of "Prep Cook" is an entry level position in most kitchens, a proving ground where you learn basic techniques that will serve as the foundation for the rest of your career. While it's impossible to give you real life experience through a video series, with practice and mastery, this series will teach you the techniques that any professional cook looking for a prep position would be expected to know (and then some!).
Sauces and Soups
