This video series is intended to instruct you in the various cooking techniques used in both home and professional kitchens. If you are just starting to learn how to cook, it is highly recommended that you listen to The Stella Culinary School Podcast episodes 6, 7 & 8 before watching these videos.

Culinary Knife Skills
Culinary knife skill techniques are one of the first things you need to master to work in a professional kitchen or just take your cooking to the next level. A large part of a commercial kitchen's operation revolves around their daily prep; there is no quality prep without efficient and accurate knife skills. This HD video series will start with the basics, like how to set up your cutting board, hold your knife and basic skills like dicing and julienne. The series then moves into more advanced prep techniques, along with tutorials on how to sharpen your knife, butchery, and basic meat fabrication. "Knife Skills - HD" was formulated as an extension of SCS Episode 1| Basic Knife Skills, an audio lecture coving this subject. It is highly recommended that you listen to this lecture before watching these videos. Kitchen Prep is the life blood of any restaurant or meal. Also known as "mise en place," meaning everything in place, kitchen prep is what allows you to cook and serve a complex meal, "a la minute." "The Completed Dish" is an advanced cooking series that puts into action all the techniques and concepts discussed in The Stella Culinary School Podcast and as demonstrated in other video series such as Knife Skills, Kitchen Prep, Sauces and Soups, etc. Every "completed dish" demonstrated has been served at Stella and will illustrate how to create a restaurant quality dish using the cooking fundamentals taught throughout the Stella Culinary curriculum. It is highly recommended that you understand the basic techniques used in each video before attempting to recreate one of these dishes.
